Manuka: There is a strong folklore surrounding the Manuka plant’s use in a variety of remedies by the Maori people and early European settlers. Woody, earthy flavour tones with a hint of mineral bitterness.
Kamahi: Found in many of New Zealand's rugged native forest, Kamahi is an excellent source of honey. The creamy coloured flowers are very attractive to bees and bloom in abundance throughout the Spring producing a light amber honey with a distinctive, full-bodied complexity of flavour preferred by many honey connoisseurs.
Rata: Anyone who has seen the Rata flowering in the Otira Gorge in the Southern New Zealand mountains cannot forget the sight of this brilliant red carpet covering the trees. This area produces the purest Rata honey considered by many to be the best of the New Zealand honeys.
Thyme: An intensely aromatic honey, the pale Thyme flowers imbue it with lingering, herby, savoury flavours enjoyed by the experienced honey connoisseur.
